La palabra cebar expresa la idea de mantener o alimentar algo en
estado floreciente. 

Esto significa que cebar mate no es el acto de llenar el
recipiente con agua caliente, sino el de mantenerlo en condiciones apetitosas.

Los pasos para lograrlo son:

1. Vierta yerba dentro del mate hasta alcanzar las tres cuartas partes del
mismo. Agregue una o dos cucharaditas de azúcar, si lo desea. También puede
endulzar el agua.

2. Tape con una mano la boca del mate, inviértalo y agítelo unos
instantes. 

La finalidad de este procedimiento es lograr que las partículas
más finas queden en la parte superior del mate. 

Esto disminuye la posibilidad de que pasen por la bombilla o la
tapen.

Vuelva el objeto a su posición normal. 

Cuide que la yerba quede inclinada, recostada sobre una de las
paredes del mate. 

3. Ponga el agua a calentar. Cuando esté tibia viértala suavemente en el hueco que quedó en la yerba. 

Deje reposar unos instantes.

4. Cuando el agua alcance su temperatura óptima (antes de hervir) puede comenzar a cebar.

6. Mantenga el agua a temperatura constante sin permitir que hierva (es recomendable el uso de un termo). 

Procure no mover la bombilla pero si fuera necesario hágalo cuando el mate esté sin agua.

Algunos cebadores suelen agregar aditivos a esta bebida para modificar su sabor, aroma o apariencia. 

Los más comunes son: miel; cáscara de naranja o limón fresca o seca; gajos de menta, yerbabuena, poleo, cedrón, peperina, boldo u otro yuyo fragante.

The most common are: honey; Orange or lemon peel fresh or dried; slices of Mint, mint, Pennyroyal, Kidron, peperina, boldo or other yuyo fragrant.
